beef tenderloin:
• 2–3 lb beef tenderloin, trimmed
• Salt and freshly ground black pepper, to taste
• 2 tbsp olive oil
• 3 cloves garlic, minced
• 1 tbsp fresh rosemary, chopped
• 1 tbsp fresh thyme, chopped
savory pan sauce:
• 1 cup beef broth
• 1/2 cup dry red wine
• 1 tbsp Worcestershire sauce
• 1 tbsp butter

prep and season
Preheat oven to 425°F (220°C).
Pat beef dry and season generously with salt and pepper.
Rub with olive oil, garlic, rosemary, and thyme.

Place tenderloin on a rack in a roasting pan.
Roast 30–40 minutes, or until internal temp reaches 130°F (54°C) for medium-rare.
Remove from oven and rest 10–15 minutes.
make the pan sauce
Place roasting pan on stovetop over medium heat.
Add red wine, scraping up browned bits. Simmer 2–3 minutes.
Add beef broth and Worcestershire. Simmer until slightly reduced.
Whisk in butter until glossy.
serve
Slice tenderloin and drizzle with warm pan sauce.
