π ingredients:
for the beef & veggies:
• 1 lb sirloin steak or shaved beef, thinly sliced
• 1 tbsp olive oil
• 1 green bell pepper, sliced
• 1 onion, thinly sliced
• Salt and black pepper, to taste
for the tortellini:
• 20 oz refrigerated cheese tortellini
for the provolone sauce:
• 2 tbsp butter
• 2 tbsp all-purpose flour
• 1 1/2 cups whole milk
• 1/2 cup heavy cream
• 1 1/2 cups shredded provolone cheese
• 1/4 tsp garlic powder
• Black pepper, to taste

cook the tortellini
Boil tortellini according to package directions. Drain and set aside.
cook the beef & veggies
Heat olive oil in a large skillet over medium-high heat.
Season beef with salt and pepper, then sear quickly until just cooked. Remove and set aside.
In the same skillet, add peppers and onions and sautΓ© until softened and lightly caramelized.
make the provolone sauce
In a saucepan, melt butter over medium heat.
Whisk in flour and cook 1 minute.
Slowly whisk in milk and cream, cooking until thickened.
Lower heat and stir in provolone cheese until smooth.
Season with garlic powder and black pepper.
bring it together
Add tortellini, beef, and veggies to the skillet.
Pour provolone sauce over everything and gently toss to coat.
serve
Serve hot, optionally topped with extra provolone or cracked black pepper.
