for the beef
• 500 g ground beef
• 1 small onion, finely diced
• 3 cloves garlic, minced
• 1 tsp dried oregano
• 1/2 tsp cumin
• 1/2 tsp paprika
• Salt & black pepper to taste
• 1 tbsp olive oil
for the zucchini
• 2 medium zucchinis, sliced or chopped
• 1 tbsp olive oil
• Salt, pepper, pinch oregano
for the rice
• 2 cups cooked rice (basmati, jasmine, or brown)
• Juice of 1/2 lemon
• 1 tbsp chopped fresh parsley or dill
• Salt & pepper to taste
for the yogurt sauce
• 1/2 cup Greek yogurt
• 1 clove garlic, grated
• 1–2 tsp lemon juice
• 1 tbsp olive oil
• Salt + pepper
• Optional: pinch dill
toppings (optional but great)
• Cherry tomatoes
• Cucumber cubes
• Crumbled feta
• Kalamata olives
• Red onion slices

cook the beef
Heat olive oil in a skillet. Add onion, cook soft.
Stir in garlic, then beef. Cook until browned, breaking it up.
Season with oregano, cumin, paprika, salt, and pepper.
Simmer 2–3 mins so spices bloom.
sear the zucchini
In another pan, heat oil and cook zucchini until golden, 5–7 mins.
Season with salt, pepper, and a pinch of oregano.
prepare rice
Mix cooked rice with lemon juice, parsley/dill, salt & pepper.
make yogurt sauce
Whisk yogurt, garlic, lemon, oil, salt & pepper until smooth and creamy.
assemble
Layer rice in bowls → add seasoned beef → top with zucchini → drizzle with yogurt sauce.
Add tomatoes, cucumber, feta, olives, onions if using.
