Golden, buttery biscuit bombs stuffed with juicy beef and melty cheese, then brushed with garlic parmesan goodness. These are dangerously snackable and perfect for parties, game day, or a fun dinner twist.

for the filling:
• 1 lb ground beef
• 1/2 small onion, finely diced
• 1 tsp salt
• 1/2 tsp black pepper
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1 tbsp ketchup
• 1 tbsp mustard
• 1 cup shredded cheddar or mozzarella cheese
for the bombs:
• 1 can refrigerated biscuit dough (8 biscuits)
• 1/2 cup grated parmesan cheese
for the garlic butter topping:
• 4 tbsp butter, melted
• 2 cloves garlic, minced
• 1 tsp Italian seasoning
• 1 tbsp chopped parsley (optional)

cook the beef
In a skillet over medium heat, cook ground beef and onion until browned and fully cooked. Drain excess grease. Stir in salt, pepper, garlic powder, onion powder, ketchup, and mustard. Remove from heat and let cool slightly.
prep the dough
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. Flatten each biscuit into a circle.
fill and seal
Place a spoonful of beef mixture in the center of each biscuit. Top with shredded cheese. Carefully pull edges up and pinch tightly to seal, forming a ball.
coat with parmesan
Roll each bomb lightly in grated parmesan and place seam-side down on the baking sheet.
bake
Bake for 15–18 minutes, or until golden brown and cooked through.
garlic butter finish
Mix melted butter, garlic, Italian seasoning, and parsley. Brush generously over hot bombs right out of the oven.
serve
Serve warm with ketchup, ranch, or garlic aioli for dipping.
