For the Steak Bites:

1/2 lb sirloin or ribeye steak, cut into cubes

1 tbsp olive oil or butter

2 garlic cloves, minced

1/2 tsp dried thyme or rosemary

Salt & pepper to taste

For the Roasted Veggies:

1 cup halved Brussels sprouts

1 cup baby potatoes, halved

1/2 cup green beans, trimmed

1 tbsp olive oil

Salt, pepper, and dried herbs to taste

Roast the Veggies:

Preheat oven to 425°F (220°C). Toss Brussels sprouts, potatoes, and green beans with olive oil, salt, pepper, and herbs. Spread on a baking tray and roast for 25–30 mins, flipping halfway.

Cook the Steak Bites:

Heat oil or butter in a skillet over medium-high. Add steak cubes and season with salt, pepper, and herbs. Sear 2–3 mins per side until browned but tender. Add minced garlic in the last minute for that golden, aromatic finish.

Combine & Serve:

Plate the roasted veggies and potatoes, then top with hot steak bites. Optional: drizzle with herb butter or a squeeze of lemon for a pop.
