• 2 cups cooked chicken, shredded or chopped
• 1 tbsp olive oil
• 2 tbsp butter
• 1 small onion, diced
• 2 garlic cloves, minced
• 1 cup mushrooms, sliced
• 1 cup mixed vegetables (peas, carrots, corn)
• 2 tbsp flour
• 1 cup chicken broth
• 1 cup heavy cream or milk
• 1/4 tsp thyme or rosemary
• Salt & pepper to taste
• 1 sheet puff pastry (thawed)
• 1 egg (for egg wash)

Heat olive oil + butter in a pan. Cook onions until soft. Add garlic, mushrooms, and mixed vegetables; sautΓ© until tender.

Stir in flour to coat veggies. Slowly pour in broth while stirring. Add cream and let it thicken into a smooth sauce.
Season with thyme, salt, and pepper. Add chicken and stir everything together.
assemble the pie
Preheat oven to 400°F/200°C.
Pour filling into a pie dish or baking pan. Lay puff pastry over top, trimming edges if needed.
Cut small slits for steam and brush pastry with beaten egg.
