Ingredients
Cookie Dough
½ cup butter, softened
½ cup granulated sugar
½ cup brown sugar
1 large egg
1 tsp vanilla extract
1½ cups all-purpose flour
½ tsp baking soda
¼ tsp salt
1 cup chocolate chips
Cheesecake Filling
4 oz cream cheese, softened
¼ cup powdered sugar
½ tsp vanilla extract
Instructions
Make the Cheesecake Filling
In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
Scoop small teaspoons onto a plate and freeze for 20–30 minutes until firm.
Prepare Cookie Dough
Preheat oven to 350°F / 175°C.
Cream butter and sugars until light and fluffy.
Add egg and vanilla; mix well.
Stir in flour, baking soda, and salt until combined.
Fold in chocolate chips.
Assemble the Cookies
Scoop cookie dough and flatten slightly.
Place a frozen cheesecake scoop in the center.
Wrap dough around filling and roll gently into a ball.
Bake
Place cookies on a lined baking sheet.
Bake 12–14 minutes until edges are set and centers are soft.
Cool & Serve
Let cookies cool on the pan for 5 minutes before transferring.
Enjoy warm or fully cooled.
