This recipe delivers a restaurant-quality sandwich with a double-dredged, ultra-crispy crust, tossed in a classic tangy buffalo sauce, and balanced with a creamy, crunchy slaw.

The Chicken
4 Boneless, skinless chicken breasts (pounded to even thickness)
1 cup All-purpose flour
1 tsp Baking powder (for extra crunch)
2 Large eggs
1/2 cup Buttermilk (or milk with a squeeze of lemon)
1 tsp Garlic powder
1 tsp Smoked paprika
Salt & Black pepper to taste
Neutral oil for frying (Vegetable, Canola, or Peanut)
The Buffalo Sauce
1/2 cup Frank’s RedHot (Original)
4 tbsp Unsalted butter, melted
1 tbsp Honey or brown sugar
1/2 tsp Worcestershire sauce

4 Brioche buns, toasted
Blue Cheese Slaw: Shredded cabbage, 1/2 cup blue cheese dressing, and a squeeze of lime.
Pickles: Thick-cut dill pickle chips.
Optional: Leaf lettuce and sliced red onion.

1. Prep the Chicken
Pat the chicken breasts dry. Place them between plastic wrap and pound them to a uniform 1/2-inch thickness. Season both sides generously with salt and pepper.
2. The Dredging Station
Set up three shallow bowls:
Bowl 1: Flour, baking powder, garlic powder, and smoked paprika mixed together.
Bowl 2: Whisked eggs and buttermilk.
The Process: Dip chicken into the flour (shake off excess), then the egg mixture, then back into the flour. Press the flour into the meat to ensure a thick coating. Let the coated chicken rest for 5 minutes before frying; this helps the breading stick.
3. Fry to Perfection
Heat 1 inch of oil in a large skillet to 350°F (175°C). Fry the chicken for 4–5 minutes per side until golden brown and the internal temperature reaches 165°F (74°C). Drain on a wire rack (not paper towels) to keep the bottom crispy.
