Ingredients:
300g ground beef (80/20 mix)
2 brioche buns, toasted
4 slices cheddar cheese
4 slices smoked bacon, cooked crispy
1 tomato, sliced
2 lettuce leaves
3 tbsp BBQ sauce
2 tbsp mayonnaise
1 tsp salt & pepper
Step-by-Step Instructions:
Form beef into loose balls. Don't pack tight.
Heat cast-iron skillet to high. Smash beef balls flat with a spatula.
Season with salt/pepper. Sear 2 mins until crusty.
Flip, top with cheese. Cover pan for 1 min to melt.
Mix BBQ sauce and mayo. Slather on buns.
Stack: Lettuce, tomato, double patty, bacon, top bun. Crush it.
The Secret: Use a screaming hot pan and don't touch the meat until you flip it to get that crust.
