Homemade Chocolate Pudding


Ingredients:

2 1/2 cups whole milk

1/2 cup granulated sugar

1/4 cup unsweetened cocoa powder

1/4 cup cornstarch

1/4 teaspoon salt

3 large egg yolks

2 tablespoons unsalted butter

1 teaspoon vanilla extract

Preparation:

In a medium saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt until smooth.

Heat the mixture over medium heat, whisking constantly until it begins to simmer and thicken (about 5-7 minutes).

In a separate bowl, lightly beat the egg yolks. Gradually pour in a little bit of the hot milk mixture, whisking constantly to temper the yolks.

Slowly pour the egg mixture back into the saucepan with the rest of the milk mixture, whisking continuously.

Continue cooking for another 2-3 minutes until the pudding is thick and glossy.

Remove from heat and stir in the butter and vanilla extract until smooth.

Pour the pudding into individual serving dishes or one large bowl. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.

Chill in the refrigerator for at least 2 hours before serving.
