1 slice sourdough or whole-grain bread
½ avocado, mashed or sliced
1 small can tuna (in water or olive oil), drained
Salt & pepper
Optional: lemon juice, chili flakes
π₯ Mediterranean Bean Salad
1½ cups white beans (cannellini or great northern), drained
½ cup cucumber, diced
2 tbsp red onion, finely chopped
2 tbsp parsley or dill, chopped
1 tbsp olive oil
1 tsp lemon juice
Salt & black pepper
π³ Soft-Boiled Eggs
2 eggs
Water for boiling
Pinch of salt

6–8 Kalamata olives

1. Make the Bean Salad
Combine beans, cucumber, red onion, and herbs in a bowl.
Add olive oil, lemon juice, salt & pepper.
Toss gently until evenly coated.
2. Soft-Boil the Eggs
Bring water to a gentle boil.
Add eggs and cook 7 minutes for jammy centers.
Cool in cold water, peel, and slice.
3. Assemble the Toast
Toast the bread.
Spread avocado over the toast.
Add tuna on top.
Season with salt, pepper, and optional lemon.
4. Plate Your Meal
Place bean salad, eggs, olives, and tuna avocado toast on a plate. Serve fresh and enjoy!
