Hearty, cozy, and budget-friendly—this classic Hobo Casserole is a one-dish comfort meal made with layers of seasoned ground beef, tender potatoes, and a creamy, cheesy finish. Perfect for busy weeknights or when you need simple, satisfying food.

• 1 lb ground beef
• 1 small onion, thinly sliced
• 4–5 medium potatoes, thinly sliced
• 1 can (10.5 oz) cream of mushroom soup
• ½ cup milk
• 1½ cups shredded cheddar cheese
• 1 tbsp olive oil
• 1 tsp garlic powder
• 1 tsp paprika
• Salt and black pepper, to taste
• Optional: sliced mushrooms, frozen peas, or corn

Preheat oven to 375°F (190°C). Heat olive oil in a skillet over medium heat. Add ground beef, season with salt and pepper, and cook until browned. Drain excess fat.

In a bowl, whisk together cream of mushroom soup and milk until smooth.
layer the casserole
Lightly grease a baking dish. Layer half of the sliced potatoes on the bottom. Season lightly with salt, pepper, garlic powder, and paprika. Add half of the cooked beef and some onion slices. Spoon over a portion of the soup mixture. Repeat layers with remaining potatoes, beef, onion, and soup.

Cover tightly with foil and bake for 45–50 minutes, until potatoes are tender. Remove foil, sprinkle cheese evenly on top, and return to oven uncovered for 10–15 minutes until bubbly and golden.
