This vibrant salad is a flavor explosion — crispy roasted chickpeas meet creamy feta, crunchy veggies, and a mountain of fresh herbs, all tied together with a lemony dressing. It’s fresh, filling, and totally next-level for lunch or dinner!

𝐈𝐧𝐠𝐫𝐞𝐝𝐒𝐞𝐧𝐭𝐬:

1 cup canned chickpeas, rinsed & drained

1 tsp olive oil

½ tsp paprika

Salt & pepper to taste

Salad Mix:

¼ red onion, thinly sliced

¼ cucumber, diced

¼ red bell pepper, thinly sliced

¼ avocado, diced

2 tbsp crumbled feta cheese

1 tbsp capers (optional but πŸ”₯)

Fresh parsley, dill, and mint (handful each)

Dressing:

1 tbsp olive oil

1 tbsp lemon juice

½ tsp Dijon mustard (optional)

Salt & pepper to taste

Roast the Chickpeas: Toss chickpeas in olive oil, paprika, salt, and pepper. Air fry or roast at 400°F (200°C) for 15–20 mins until crispy.

Prep the Salad: In a large bowl, combine sliced onion, cucumber, red pepper, avocado, herbs, and capers.

Add Chickpeas & Feta: Toss in crispy chickpeas and crumbled feta.

Dress It Up: Whisk dressing ingredients and drizzle over salad. Toss gently.
