Ingredients:
1 cup orzo pasta
1 tbsp olive oil
2 cups sliced mushrooms
2 cups fresh spinach
2 garlic cloves, minced
2 cups vegetable broth
2 tbsp grated Parmesan (optional)
Salt & pepper to taste
Directions:
1. In a skillet, heat olive oil over medium heat. Sautรฉ garlic and mushrooms for 5–6 minutes.
2. Add dry orzo and toast for 1–2 minutes.
3. Pour in vegetable broth. Bring to a simmer, cover, and cook for 8–10 minutes, stirring occasionally.
4. Stir in spinach and cook until wilted.
5. Season with salt, pepper, and sprinkle Parmesan if desired.
