Ingredients:
12 large strawberries
8 oz cream cheese, softened
1/2 cup cookie butter
1/4 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup graham cracker crumbs (for topping)
Whipped cream (for drizzling, optional)
Directions:
Prepare the Strawberries:
Wash the strawberries and gently pat them dry.
Carefully hollow out the center of each strawberry using a small knife or a melon baller, creating space for the filling.
Make the Cheesecake Filling:
In a mixing bowl, beat the softened cream cheese, cookie butter, powdered sugar, and vanilla extract until smooth and creamy.
Stuff the Strawberries:
Use a piping bag or a small spoon to fill each hollowed strawberry with the cheesecake mixture. Fill them generously.
Add the Topping:
In a separate bowl, mix the graham cracker crumbs with a little extra cookie butter if desired for added flavor and moisture.
Sprinkle the graham cracker mixture on top of the stuffed strawberries, pressing gently to adhere.
Chill and Serve:
Place the stuffed strawberries in the refrigerator for about 30 minutes to set.
Drizzle with whipped cream if desired before serving.
