Protein-Packed Chickpea & Chicken Salad Bowl


Ingredients:

1 cup cooked or canned chickpeas, roasted with olive oil, paprika, and garlic powder 

1 cup shredded cooked chicken breast 

2 boiled eggs, sliced 

1 cup cherry tomatoes, halved 

1 avocado, diced 

Fresh cilantro for garnish 

Salt & black pepper 

Instructions:

Roast chickpeas — toss with olive oil, paprika, garlic powder, salt, and roast at 200°C (400°F) for 20 min until crispy.

Prepare chicken — shred pre-cooked chicken or cook fresh and shred.

Assemble bowl — arrange chicken, chickpeas, eggs, tomatoes, and avocado over a bed of greens.

Season — sprinkle with salt, pepper, and fresh cilantro.

Serve — enjoy as is or with your favorite dressing.
