Ingredients:
2 medium cucumbers, chopped into chunks
2 ripe avocados, diced
¼ cup fresh parsley or cilantro, chopped
2 tbsp plain Greek yogurt (or sour cream)
1 tbsp fresh lemon juice
1 tsp olive oil
Salt & black pepper, to taste
Pinch of chili flakes (optional)
Instructions:
In a bowl, whisk together Greek yogurt, lemon juice, olive oil, salt, pepper, and chili flakes until creamy.
Add the cucumber chunks, avocado cubes, and fresh parsley/cilantro.
