Lemon-Lime Cherry Pistachio Loaf Cake 🍋🍒🍰


Ingredients:

1 1/2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1 tsp vanilla extract

Zest of 1 lemon

Zest of 1 lime

1/2 cup buttermilk

1 cup fresh cherries, pitted and halved

1/2 cup pistachios, chopped

1/2 cup heavy cream

1/4 cup powdered sugar

Fresh cherries and chopped pistachios for garnish

Directions:

Preheat your oven to 350°F (175°C) and grease a loaf pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

In a large bowl, beat the butter and sugar together until light and fluffy.

Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract, lemon zest, and lime zest.

Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, beginning and ending with the flour mixture.

Gently fold in the cherries and pistachios.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

In a small bowl, whip the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream over the cooled cake.

Garnish with fresh cherries and chopped pistachios.
