Ingredients:
4 lobster tails
4 tablespoons butter, divided
4 cloves garlic, minced
1 ⁄2 cup heavy cream
1 ⁄4 cup grated Parmesan cheese
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley
Salt and pepper, to taste
Instructions:
Prepare the lobster tails: Preheat your oven to 425°F (220°C). Use kitchen shears to make a lengthwise cut across the top of each lobster shell. Carefully lift the meat, resting it on the shell.
Season: Sprinkle each tail with salt, pepper and a little melted butter.
Bake: Arrange tails on a baking tray and bake for 8-10 minutes, until firm and opaque.
Make the sauce: In a skillet over medium heat, melt remaining butter. Add garlic and sauté until aromatic. Pour in heavy cream and Parmesan, and simmer until thickened. Stir in lemon juice and season with salt and pepper to taste.
Finish and serve: Spoon rich garlic butter sauce over cooked lobster tails and garnish with parsley.
