Ingredients:
1 lb steak (such as sirloin or flank)
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
8 oz fettuccine pasta
1/2 cup gorgonzola cheese, crumbled
1/2 cup heavy cream
2 tbsp butter
1/2 cup Parmesan cheese, grated
1 cup baby spinach
1 cup mushrooms, sliced
1 large onion, thinly sliced
2 tbsp balsamic vinegar
Instructions:
Preheat the oven to 400°F (200°C). Toss the mushrooms with olive oil, salt, and pepper, and roast them for 15-20 minutes until golden.
Meanwhile, in a skillet over medium heat, caramelize the onions by cooking them in butter for about 20 minutes, adding the balsamic vinegar at the end.
Cook the fettuccine according to the package instructions. Drain and set aside.
Season the steak with salt and pepper and grill it to your desired doneness. Let it rest, then slice thinly.
In a large skillet, melt the butter over medium heat. Stir in the heavy cream and Parmesan cheese until smooth. Add the gorgonzola cheese and stir until melted.
Toss the pasta with the Alfredo sauce, roasted mushrooms, spinach, and caramelized onions.
Top the pasta with the sliced steak and serve.
