- 1 cup fresh blueberries
- 4 cups mixed greens
- 4 ripe peaches
Condiments:
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 tbsp honey

- 1/4 cup olive oil

- 1/4 cup toasted pecans or walnuts

- 1/4 cup feta cheese, crumbled
Instructions:
1. Preheat Grill:
Preheat your grill to medium-high heat.
2. Prepare Peaches:
Wash and halve the peaches, removing the pits. Brush the cut sides lightly with olive oil.
3. Grill Peaches:
Place the peaches cut-side down on the grill. Grill for about 3-4 minutes, until grill marks appear and the peaches are slightly softened. Flip and grill for an additional 2-3 minutes. Remove from grill and let cool slightly before slicing into wedges.
4. Make Dressing:
In a small bowl, whisk together balsamic vinegar, Dijon mustard, honey, and olive oil. Season with salt and pepper to taste.
5. Assemble Salad:
In a large bowl, toss the mixed greens with a small amount of the dressing. Arrange the grilled peach wedges and fresh blueberries on top of the greens. Sprinkle with toasted pecans or walnuts and crumbled feta cheese.
6. Serve:
Drizzle additional dressing over the salad if desired. Serve immediately and enjoy!
