SKINNY, lightened up and healthy enchilada bake!!!! Made right in the crockpot!!! So cheesy and yet guilt-free!!! INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. Gordon Ramsay Inspired Steak Marinade



Ingredients:

12 oz Steak

⅓ cup Balsamic Vinegar

2 tablespoons Soy Sauce

3 tablespoons Olive Oil

2 cloves Garlic, minced

2 sprigs Rosemary, minced

⅔ cup Dark Brown Sugar

½ teaspoon Kosher Salt

½ teaspoon Ground Black Pepper

⅓ teaspoon Red Pepper Flakes


Instructions:

Finely mince the garlic cloves and rosemary sprigs to prepare the marinade.

In a mixing bowl, combine balsamic vinegar, soy sauce, dark brown sugar, and olive oil.

Add the minced garlic, rosemary, kosher salt, ground black pepper, and red pepper flakes to the bowl with the liquid ingredients. Stir until well combined.

Transfer the marinade into a zip-lock bag. Seal the bag tightly and shake it well to ensure even distribution of the ingredients.

Add the steak to the bag, ensuring it is coated thoroughly with the marinade. Seal the bag and place it in the refrigerator for a minimum of six hours, up to 24 hours for optimal flavor infusion.

After marinating, remove the steak from the bag and pat it dry with paper towels. Allow it to reach room temperature before cooking for even cooking results.

Heat a tablespoon of olive oil in a skillet over medium-high heat. Once hot, add the steak to the skillet and cook until it develops a crispy exterior and releases its flavors, adjusting the cooking time based on desired doneness.

Notes:

For maximum flavor and tenderness, marinate the steak for at least 6 hours, or up to 24 hours.

Ensure the steak is at room temperature before cooking to promote even cooking throughout.
