INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. Ingredients ¾ cup brown sugar packed ½ cup sugar 1 cup butter softened 1 tsp almond extract 1 egg cage free 2 cups flour ¼ cup unsweetened cocoa 1 tsp baking soda ½ tsp salt 1 cup white chocolate chips 1 cup walnuts chopped Instructions Preheat oven to 375°. In a large mixing bowl, mix brown sugar, sugar and butter until light and fluffy. Add egg and almond extract, mix well. Mix in flour, cocoa, baking soda and salt, mix until well combined. Stir in white chocolate chips and walnuts. Drop by rounded tablespoon onto ungreased cookie sheets. Bake for 10-12 minutes or until set. Cool for 2 minutes and then remove to wire rack to cool Notes

Cranberry Walnut Cookie Balls

Ingredients 1 cup butter, softened (2 sticks) 6 Tbs sugar, ⅜ cup ½ tsp vanilla extract 2 cups all-purpose flour ⅛ tsp salt 2 cups walnuts, chopped into small pieces ½ cup Craisins® dried cranberries, chopped into small pieces 1 cup powdered sugar Instructions Preheat oven to 325°. In a medium mixing bowl, beat butter, sugar and vanilla on medium speed until creamy. Gradually beat in flour and salt until just blended. Add walnuts and dried cranberries. Stir. Using a 1" cookie scoop, or with clean hands, roll into 1" balls and place on ungreased cookie sheets 1 inch apart. Bake for 15-18 minutes just until bottoms are lightly browned. Remove from oven. While cookies are baking, pour powdered sugar into a shallow bowl or pie plate. Roll 4-5 hot cookies at a time into the powdered sugar until each cookie is well coated. Place cookies on wire rack to cool completely.

Ingredients 5 large potatoes, quartered lengthwise, sliced ¼" thick 8 hard boiled eggs, chopped ¾ cup onions, chopped 5 cloves garlic, chopped 1½ - 2 cup sour cream 1 cup butter, sliced thin 3 cups grated cheese Salt and pepper to taste Green onion for garnish, optional Instructions Peel and slice potatoes length wise in quarters, then slice ¼" wide. Ingredients 4 lbs chicken wings ¼ cup vegetable oil 1 tsp salt 1 tsp pepper ½ cup butter, melted 2 Tbsp lemon pepper 1 Tbsp lemon juice Instructions Preheat oven to 400° and line a baking sheet(s) with foil. Generously spray with a non stick spray. Set aside.  Pat dry chicken wings with paper towels and place in a large mixing bowl. Season with salt and pepper then add oil. Toss to coat. Place wings on baking sheet(s) and bake for 35-40 minutes, turning after 20 minutes. In a small mixing bowl, add lemon pepper and lemon juice to melted butter, stir. Once wings are done baking and temperature has reached 165°, remove wings from oven and brush both sides with lemon pepper sauce. Turn on broil and place wings back in the oven. Broil for a few minutes, making sure they do not burn. Carefully remove from oven and enjoy.
