These wraps balance the heat of sweet chili sauce with crispy chicken and a refreshing, crunchy lime slaw. Perfect for a quick lunch or a vibrant weeknight dinner.
Ingredients
The Chicken
Chicken: 1.5 lbs chicken breast or thighs, cut into bite-sized strips.
Coating: 1/2 cup cornstarch (for extra crispiness).
Seasoning: 1 tsp garlic powder, 1/2 tsp salt, 1/2 tsp black pepper.
Sauce: 1/2 cup Thai Sweet Chili Sauce (plus extra for drizzling).
Oil: 3 tbsp neutral oil (avocado, vegetable, or canola) for pan-frying.
The Zesty Slaw
2 cups shredded cabbage (mix of red and green).
1 medium carrot, shredded.
1/4 cup fresh cilantro, chopped.
1 tbsp lime juice.
1 tsp honey or agave.
For Assembly
4 large flour tortillas (warmed).
1 ripe avocado, sliced.
Optional: Thinly sliced red onions, cucumber ribbons, or sesame seeds.
Instructions
1. Prepare the Chicken
In a bowl, toss the chicken strips with cornstarch, garlic powder, salt, and pepper until evenly coated.
Heat oil in a large skillet over medium-high heat.
Fry the chicken in batches for 5–7 minutes, turning occasionally, until golden brown and crispy.
Remove the chicken from the pan and drain on a paper towel.
Toss the crispy chicken in the sweet chili sauce until fully glazed.
2. Make the Slaw
In a medium bowl, whisk together the lime juice and honey.
Add the cabbage, carrots, and cilantro.
Toss well and let sit for 5 minutes to soften slightly.
3. Assemble the Wraps
Warm the Tortillas: Heat each tortilla in a dry pan for 20 seconds per side until pliable.
Layer: Place a handful of the zesty slaw in the center of the tortilla.
Add Chicken: Top with a generous serving of the sweet chili chicken.
