lemon chili chicken:
• 1 1/2 lb boneless, skinless chicken breast
• Zest and juice of 2 lemons
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 tsp chili powder
• 1/2 tsp smoked paprika
• 1/2 tsp cumin
• Salt and black pepper, to taste
cucumber salad:
• 2 large cucumbers, diced
• 1/4 small red onion, thinly sliced
• 1 tbsp olive oil
• 1 tbsp lemon juice or red wine vinegar
• Salt and pepper, to taste
• Optional: chopped dill or parsley
for the bowls:
• 1 cup hummus
• Cooked rice, quinoa, or cauliflower rice
• Optional extras: cherry tomatoes, olives, feta cheese

marinate the chicken
In a bowl, whisk lemon zest, lemon juice, olive oil, garlic, chili powder, smoked paprika, cumin, salt, and pepper.
Add chicken and marinate at least 20 minutes (up to 24 hours).
grill the chicken
Preheat grill or grill pan to medium-high.
Grill chicken 5–6 minutes per side until cooked through and lightly charred.
Rest 5 minutes, then slice.
make the cucumber salad
Toss cucumbers, red onion, olive oil, lemon juice, salt, pepper, and herbs if using.
