Crispy Honey Garlic Chicken Wings

These wings are the perfect balance of sweet, savory, and sticky. By using a specialized coating technique, we achieve deep-fried crispiness without the need for a heavy oil bath.

Ingredients

The Wings

2 lbs (1kg) Chicken wings (flats and drumettes separated)

1 tbsp Baking powder (NOT baking soda; this makes them crispy)

1/2 tsp Salt

1/2 tsp Black pepper

1/2 tsp Garlic powder

The Honey Garlic Sauce

1/3 cup Honey

4 cloves Garlic, minced

2 tbsp Soy sauce

1 tbsp Fresh ginger, minced (optional)

1 tsp Sriracha or chili flakes (for a kick)

1 tsp Lemon juice or rice vinegar

Instructions

1. Prep the Wings

Dry the wings: Use paper towels to pat the chicken extremely dry. Moisture is the enemy of crispiness.

Coat: In a large bowl, toss the wings with baking powder, salt, pepper, and garlic powder until evenly coated.

2. Cooking Options

Option A: Oven Baked (The "Fried" Trick)

Preheat oven to 425°F (220°C).

Place a wire rack over a baking sheet lined with foil.

Arrange wings in a single layer on the rack.

Bake for 45–50 minutes, flipping halfway through, until golden brown and very crispy.

Option B: Air Fried

Preheat air fryer to 400°F (200°C).

Place wings in the basket in a single layer (do not overcrowd).

Cook for 20–25 minutes, shaking the basket every 8 minutes until skin is crackling.

3. Make the Sauce

While the wings cook, combine honey, garlic, soy sauce, ginger, and lemon juice in a small saucepan over medium heat.

Bring to a light simmer and cook for 3–5 minutes until the sauce thickens slightly into a glaze.

Remove from heat.

4. The Toss

Place the hot, crispy wings into a large clean bowl.

Pour the warm honey garlic sauce over them.

Toss well to coat every wing.

Serving Suggestions

Garnish: Sprinkle with toasted sesame seeds and chopped green onions.

Side: Serve with celery sticks and a side of ranch or blue cheese dressing to cut through the sweetness.

Pro Tip: Let the wings sit for 2 minutes after tossing; the sauce will "tack up" and stick better to the skin.
