Keto Mini Pizzas



Serves: 6–8 mini pizzas

Perfect bite-sized keto pizzas with a crispy fathead crust and customizable toppings.

Ingredients

Crust (Fathead Dough)

2 cups shredded mozzarella cheese

2 oz cream cheese

1 cup almond flour

1 large egg

½ teaspoon garlic powder

½ teaspoon Italian seasoning

Toppings (Customize as Desired)

½ cup sugar-free marinara sauce (Rao’s or homemade)

1 cup shredded mozzarella cheese

½ cup mushrooms, chopped

¼ cup red onion, thinly sliced

Optional keto toppings: pepperoni, sausage, bacon, olives, bell peppers, spinach

Instructions

1. Make the Crust

Preheat oven to 400°F (200°C).

In a microwave-safe bowl, melt mozzarella and cream cheese for 1–2 minutes, stirring until smooth.

Mix in almond flour, egg, garlic powder, and Italian seasoning until a dough forms.

2. Shape & Bake

Roll dough between parchment paper to about ¼-inch thickness.

Cut into small rounds using a cookie cutter or jar lid.

Place on a parchment-lined baking sheet.

Bake for 8–10 minutes, until lightly golden.

3. Add Toppings

Spread a small amount of marinara on each crust.

Sprinkle with mozzarella cheese.

Add mushrooms, onions, and any additional toppings.

4. Finish Baking

Return to oven for 6–8 minutes, until cheese is melted and bubbly.

Optional: Broil for 1–2 minutes for extra browning.

5. Serve

Let cool slightly before serving. Enjoy warm!
