This hearty salad is rich, creamy, and loaded with texture. A mix of peas, corn, carrots, tomatoes, radish, and tender chicken (or potatoes), all tossed in a mayo-based dressing, served alongside perfectly sliced hard-boiled eggs. It’s nostalgic, filling, and perfect for gatherings or a cozy homemade meal.

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:

3 hard-boiled eggs, sliced

½ cup cooked peas

½ cup sweet corn

½ cup cooked carrots, diced

½ cup cooked chicken breast or potatoes, cubed

1 tomato, diced

3–4 radishes, thinly sliced

A few slices red onion

3–4 tbsp mayonnaise

Salt & black pepper to taste

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:

Boil eggs for 10 minutes, cool, peel, and slice.

In a large bowl, combine peas, corn, carrots, chicken (or potatoes), tomatoes, radishes, and onion.

Add mayonnaise, season with salt and black pepper, and gently mix until creamy and evenly coated.

Arrange sliced eggs neatly on one side of a large white plate.

Spoon the creamy vegetable salad next to the eggs.

Garnish with extra radish slices and serve chilled or at room temperature.
