• 2 lbs baby potatoes, halved
• 3 tbsp olive oil
• 1 packet ranch seasoning mix
• 1/2 tsp garlic powder
• 1/2 tsp paprika
• Salt & pepper to taste
• 1 cup shredded cheddar cheese
• 2 tbsp chopped parsley or chives (optional)
