BAKED LOBSTER MAC AND CHEESE

INGREDIENTS

For the Mac and Cheese:

12 ounces elbow macaroni or cavatappi pasta

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk, warmed

1 cup heavy cream, warmed

1 teaspoon Dijon mustard

1/4 teaspoon ground nutmeg (optional)

2 cups shredded sharp cheddar cheese

1 cup shredded Gruyere cheese

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

For the Lobster:

1 pound cooked lobster meat, chopped into bite-sized pieces

1 tablespoon butter

1 clove garlic, minced

1 tablespoon fresh lemon juice

For the Topping:

1 cup panko breadcrumbs

2 tablespoons unsalted butter, melted

2 tablespoons grated Parmesan cheese

1 teaspoon paprika

1 tablespoon fresh parsley, chopped (optional)

INSTRUCTIONS

Preheat your oven to 375°F (190°C). Cook the pasta in salted boiling water until al dente. Drain and set aside.

In a large saucepan, melt 2 tablespoons of butter over medium heat. Whisk in the flour and cook for 1-2 minutes to create a roux. Gradually whisk in the warmed milk and cream, stirring constantly, until the sauce thickens. Stir in the Dijon mustard, nutmeg (if using), and season with salt and pepper. Reduce heat to low and gradually stir in the cheddar, Gruyere, and Parmesan cheese until melted and smooth.

In a skillet, melt 1 tablespoon of butter over medium heat. Add the minced garlic and sautรฉ for 30 seconds. Stir in the chopped lobster and cook for 1-2 minutes. Add lemon juice and toss to coat. Remove from heat.

Fold the cooked pasta and lobster mixture into the cheese sauce until evenly combined. Transfer to a greased 9x13-inch baking dish.

In a small bowl, mix the panko breadcrumbs, melted butter, Parmesan cheese, and paprika. Sprinkle the breadcrumb mixture evenly over the pasta. Bake for 20-25 minutes, or until the top is golden brown and bubbling. Garnish with fresh parsley before serving.
