INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. 4 cups all purpose flour plus extra for dusting 2 teaspoons yeast 3 tablespoons sugar 1 1/4 cups warm milk 1/4 cup oil 2 eggs 1/2 teaspoon salt Brushing: 1 egg white plus 2 tablespoons water (Egg wash for brushing before baking) 2 tablespoons melted butter for brushing after baking Steps In a bowl, add yeast, sugar. Then add water, let it bubbles for 5 minutes. Add oil, salt and eggs. Add flour, 1 cup at a time. Kneed for 5-7 minutes until smooth. Cover with plastic, let it rise for 1 hr or doubling the size. Divide the dough to 16-24 pieces. Roll and form like a ball. Arrange in a baking pan. Let it rest and rise for another 30 minutes. Preheat oven at 350 F. This Southern fried chicken recipe is originally from Alabama and has been passed down for generations. Ingredients 1 cup all-purpose flour 2 teaspoons paprika 1 teaspoon salt 1 teaspoon ground black pepper 1 teaspoon garlic powder 1 teaspoon onion powder 1/2 teaspoon cayenne pepper (Optional) 1 (3 pound) whole chicken, cut into pieces vegetable oil for frying Directions Gather all ingredients. Pineapple Glazed Ham

Ingredients 1 fully cooked ham (4–6 lbs) 1 cup pineapple juice ½ cup brown sugar 2 tbsp Dijon mustard 1 tbsp honey Optional: pineapple rings and maraschino cherries for garnish Preparation Preheat oven to 325°F (160°C). Place ham in a roasting pan and score the surface in a crisscross pattern. In a small saucepan, combine pineapple juice, brown sugar, mustard, and honey. Simmer for 5–7 minutes until slightly thickened. Brush glaze over ham. Cover loosely with foil and bake for about 1½ to 2 hours, basting with glaze every 30 minutes. Uncover during the last 20 minutes to let the glaze caramelize. Optional: Add pineapple rings and cherries on top during final bake. Let rest 10 minutes before slicing.

This is just a downright delicious and easy noodle stir fry that channels the flavours of everybody's favourite Singapore Noodles. Same sauce, same egg ribbons, and strips of red capsicum. But with chicken and bacon instead of having to make or hunt down Chinese BBQ Pork and peel fresh prawns! I call this diet haters' diet food because simple substitutions mean you won't feel deprived. You shouldn't miss the tortilla chips because you have delicious black beans instead, and you still get the yummy spicy Mexican flavor and cheese. While not necessarily authentic, this salad is easy to make! If you have time, it's is also wonderful topped with onions and maybe fresh jalapenos.
