OMG DON'T LOSE THIS RECIPE! This Oven Roasted Smoked Sausage and Potatoes is an easy and flavorful dish, combining smoky sausage with tender, crispy potatoes. It's a perfect weeknight meal or hearty side dish that’s simple to make and packed with flavor!

Ingredients:

1 lb smoked sausage (kielbasa or andouille), sliced

4 large russet or Yukon gold potatoes, chopped into bite-sized pieces

1 red bell pepper, chopped (optional)

1 yellow onion, chopped

3 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

1 tsp dried thyme or rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions:

Preheat the oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.

Prepare the ingredients: In a large bowl, toss the chopped potatoes, onions, and bell peppers with olive oil, garlic powder, paprika, thyme, salt, and pepper.

Add the sausage: Add the sliced smoked sausage to the bowl and toss everything together until evenly coated.

Roast the dish: Spread the sausage and potato mixture evenly on the prepared baking sheet. Roast in the preheated oven for 35-40 minutes, tossing halfway through, until the potatoes are golden and crispy, and the sausage is browned.

Serve: Garnish with freshly chopped parsley and serve hot with a side of mustard or your favorite dipping sauce.

Helpful Tips:

For extra flavor, toss the potatoes with a sprinkle of grated Parmesan cheese before roasting.
