Ingredients:
1 lb smoked sausage (kielbasa or andouille), sliced
4 large russet or Yukon gold potatoes, chopped into bite-sized pieces
1 red bell pepper, chopped (optional)
1 yellow onion, chopped
3 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp dried thyme or rosemary
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Preheat the oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
