White Chocolate Macadamia Nut Cheesecake with Caramel 🍰


Treat yourself to the ultimate dessert indulgence! This rich and creamy cheesecake is packed with smooth white chocolate, crunchy macadamia nuts, and swirled with luscious caramel. It's a perfect balance of sweetness and texture, ideal for special occasions or any time you crave a decadent treat.

Ingredients:

8 tbsp butter, melted 🧈

1 cup macadamia nuts, roughly chopped 🥜

24 oz cream cheese, room temperature 🧀

1 cup white chocolate, melted 🍫

2 eggs 🥚

1 egg yolk 🥚

1 cup caramel sauce 🍯

8 oz sour cream 🥛

2 cups graham cracker crumbs 🍪

1 cup brown sugar 🍂

1 tbsp high-quality vanilla extract 🌸

1 cup macadamia nuts (for topping) 🥜

4 tbsp melted white chocolate 🍫

½ cup sugar 🍬

Instructions:

Prepare the Crust: 1️⃣ In a bowl, mix melted butter with graham cracker crumbs until fully combined.

2️⃣ Spray a 9-inch springform pan with nonstick baking spray and press the crust mixture into the bottom and up the sides.

3️⃣ Place the crust in the fridge to firm up while you prepare the filling.

Prepare the Filling: 4️⃣ Preheat the oven to 325°F (163°C).

5️⃣ Melt the white chocolate using a double boiler or in short bursts in the microwave. Stir until smooth.

6️⃣ In a large bowl, whip the cream cheese until fluffy. Add sour cream and melted white chocolate, mixing until smooth.

7️⃣ Beat in the eggs, egg yolk, sugar, brown sugar, and vanilla extract until creamy and well combined.

Assemble the Cheesecake: 8️⃣ Pour the cream cheese filling into the prepared crust.

9️⃣ Drizzle ½ cup of caramel sauce on top and gently swirl it with a knife.

🔟 Sprinkle chopped macadamia nuts around the edges of the cheesecake.

Bake the Cheesecake: 1️⃣1️⃣ Set the springform pan on a cookie sheet and bake for 60-75 minutes, until the edges are set and the center is slightly jiggly.

Cool and Chill: 1️⃣2️⃣ Let the cheesecake cool at room temperature for 1 hour.
