Pumpkin Pie Overnight Oats


Ingredients:

½ cup rolled oats

½ cup milk (dairy or non-dairy)

¼ cup pumpkin puree

1 tbsp maple syrup

¼ tsp ground cinnamon

⅛ tsp ground nutmeg

⅛ tsp ground ginger

1 tbsp chia seeds

¼ tsp vanilla extract

Optional toppings: whipped cream, chopped nuts, or a sprinkle of cinnamon

Instructions:

In a jar or bowl, combine oats, milk, pumpkin puree, maple syrup, cinnamon, nutmeg, ginger, chia seeds, and vanilla extract.

Mix well, cover, and refrigerate overnight (or at least 4 hours).

In the morning, stir the oats and add more milk if needed for desired consistency.

Top with whipped cream, nuts, or a sprinkle of cinnamon before serving.

Notes:

Adjust spices to your taste for a stronger or milder flavor.

Swap maple syrup with honey or agave for a different sweetness.
