Ingredients:
150g all-purpose flour
2 tsp baking powder
1/2 tsp salt
100 ml milk
1 large egg
50g melted butter
100g mozzarella cheese, shredded
50g mini pepperoni slices
100g marinara sauce
Fresh basil, chopped for garnish
Instructions:
Prepare the Batter: In a bowl, mix together flour, baking powder, and salt. In another bowl, whisk together milk, egg, and melted butter. Combine the wet and dry ingredients, then fold in half of the cheese.
Add the Fillings: Grease a muffin tin. Spoon a layer of batter into each muffin cup. Add a teaspoon of marinara sauce and some pepperoni slices. Top with more batter, then sprinkle the remaining cheese and a few more pepperoni slices on top.
Bake the Muffins: Preheat your oven to 375°F (190°C). Place the muffin tin in the oven and bake for 15-20 minutes, or until the muffins are golden and cooked through.
Garnish and Serve: Let the muffins cool slightly, then garnish with chopped fresh basil. Serve warm.
