Savory Chicken and Bell Pepper Muffins
Ingredients:
2 cups self-raising flour
1 cup shredded cheese
150g diced cooked chicken
1 red bell pepper, diced
2 green onions
Chopped parsley
2 eggs
1 cup milk
80g melted butter
Preparation:
Preheat oven to 180°C (350°F) and prepare a muffin tin.
In a large bowl, combine the flour and shredded cheese.
Add the chicken, bell pepper, green onions, and parsley, then mix.
In a separate bowl, whisk together the eggs, milk, and melted butter.
Add the wet ingredients to the dry ingredients and mix until just combined.
Divide the batter among the muffin cups.
Bake for 20-25 minutes, or until golden brown.
Let cool slightly before removing from the pan and serving.
