Sticky Chinese Pork Ribs
These sticky Chinese pork ribs are incredibly delicious, juicy and thick, perfect for entertaining guests. Once you start eating, it's hard to stop, so remember to have plenty of tissues for your guests!
Ingredients:
Main Ingredient:
2 kg (4 lb) meaty pork ribs, cut into individual ribs
Marinade:
1 tsp sesame oil
2 tbsp lemon juice
2 tbsp Shaoxing wine
4 tbsp soy sauce
4 tbsp brown sugar or honey
4 tbsp ketchup or tomato sauce
2 tbsp seafood sauce
2 tbsp oyster sauce
2 tbsp Sichuan peppercorn sauce (optional, for added spiciness)
6 cloves garlic, minced
2 tbsp minced ginger
1 tsp Chinese five-spice powder
1 tsp salt
Garnish:
Cilantro, sesame seeds, shredded scallions, and fresh red chili flakes
Instructions:
Marinate the ribs:
Mix all marinade ingredients in a bowl or plastic bag.
Add the ribs and marinate for at least 1 hour, or overnight if desired. If desired, marinated ribs can be frozen.
Preparation before cooking: Remove the ribs from the freezer and allow them to come to room temperature.
Preheat the oven to 160°C (320°F).
Slow-roasting the ribs: Pour the ribs and all the marinade into a large enough baking dish, ensuring the ribs are arranged in a single layer and not too spread out.
Add water until it reaches about 1/3 of the height of the ribs.
Cover the baking dish tightly and slow-roast in the preheated oven for about 1.5 hours.
Browsing and reducing the sauce: Remove the baking dish, remove the covering, and check that the ribs are quite tender but still fall off the bone. The marinade should still be relatively thin at this point.
Turn the ribs, return them to the oven, and continue roasting uncovered for 20 minutes.
Remove the ribs again, turn them, and drizzle the marinade over them. Continue roasting for 10 to 20 minutes, until the ribs are tender, sticky, and glossy, and the marinade has reduced to a thick sauce coating the ribs.
Resting and Garnishing: Let the ribs rest for 5 minutes.
Garnish with cilantro, sesame seeds, shredded scallions, and fresh red chili flakes before serving.
Tips:
Make sure the ribs marinate for a sufficient amount of time to fully absorb the marinade flavors.
Keep the baking tray tightly covered during slow baking to maintain the ribs' moisture.
Observe the ribs closely during the final stage to prevent burning.
