This dry-roast spice blend provides the coarse texture and dark color seen on the shells.
**Dry Roast & Grind:**
* 2 tbsp Black peppercorns (the star ingredient)
* 1 tbsp Fennel seeds
* 1 tsp Cumin seeds
* 2-3 Dried red chilies
* *Roast until fragrant, then grind into a coarse powder (do not make it a fine dust).*

## 2. The Base & Sauté
### Ingredients:
* **Crab:** 2 large Mud Crabs or Blue Swimmers (cleaned, but kept whole for presentation)
* **Fats:** 3 tbsp Coconut oil or Gingelly oil
* **Aromatics:** 2 large onions (finely chopped), 1 tbsp ginger-garlic paste, and 3 sprigs of fresh **Curry Leaves**
* **Acid:** 1 tsp Tamarind paste or a squeeze of fresh lime
### Instructions:
1. **Tempering:** Heat oil in a large wok or *kadai*. Add a teaspoon of fennel seeds and a handful of curry leaves until they crackle.
2. **Sauté:** Add the onions and fry until they are a deep, dark brown. Stir in the ginger-garlic paste and sauté until the raw aroma is gone.
3. **The Spice:** Add the ground black pepper masala, ½ tsp turmeric powder, and salt. Add a splash of water to prevent the spices from burning.
4. **The Crab:** Toss the crabs into the masala. Cover and cook on medium heat for 10–12 minutes. The crab shells will turn bright orange as they cook.
5. **The Finish:** Remove the lid and stir-fry on high heat for another 3–5 minutes until the masala clings tightly to the shells and becomes "dry" (Varuval style).

## 3. Plating for the "Art" Look
To mirror your reference photo:
* **The Foundation:** Lay a fresh, clean banana leaf on a wooden board or dark plate.
* **The Hero:** Position the crabs centrally, overlapping them slightly.
* **The Garnish:** Fry a few extra curry leaves in oil for 5 seconds until translucent and glossy; scatter them over the top along with extra cracked black pepper.
* **The Contrast:** Place two bright green lime wedges and a side of steamed rice in a brass or gold-toned bowl to complete the palette.
