A bright and balanced breakfast win to start your day strong!
2 eggs
1/2 cup red bell pepper, sliced
1/2 cup yellow bell pepper, sliced
1/2 cup broccoli florets
1/3 cup mushrooms, sliced
1 tbsp olive oil or butter
Salt & freshly cracked black pepper to taste
Heat half the oil in a skillet and sauté bell peppers, broccoli, and mushrooms until just tender. This gives you a crisp-tender veggie boost and a color-packed power plate.
In another pan, heat the rest of the oil or butter. Crack in the eggs and cook sunny-side up until the whites are set but yolks are still runny. Season with salt and plenty of black pepper for that golden yolk moment and perfect breakfast protein hit.
Place sautéed veggies on a plate and slide eggs beside them. Arrange mushrooms and broccoli to frame the eggs for a brunch-worthy finish and clean-eating glow-up.
