## 1. The Components

* **2 tbsp heavy cream**
### II. The Spinach & Dill Cream Cheese Filling
* **5 oz (140g) cream cheese**, softened
* **1 cup fresh spinach**, blanched, squeezed *completely* dry, and chopped
* **2 tbsp fresh dill**, chopped
* **1 clove garlic**, minced
* **Salt and pepper to taste**
### III. The Outer Filling & Assembly
* **2–3 lb (1–1.3kg) boneless, skinless turkey breast**
* **1 red bell pepper**, julienned (thin strips)
* **1/2 cup pistachios**, shelled and roughly chopped
* **1 cup shredded Provolone or Gruyère cheese**
* **Butcher's twine**

## 2. Instructions
### Phase 1: Prepare the Fillings
1. **Make the Spinach Filling:** In a medium bowl, mix the softened cream cheese, dried spinach, dill, minced garlic, salt, and pepper until combined. Set aside.
2. **Make the Chicken Velvet:** Cut chicken thighs into small chunks. Place in a food processor with the egg white, cornstarch, salt, pepper, and cream. Pulse until it forms a smooth, sticky paste. Keep refrigerated until ready to assemble.
### Phase 2: Prepare the Turkey
1. **Butterfly:** Place the turkey breast on a cutting board. Using a sharp knife, slice it horizontally through the middle, stopping about 1/2 inch from the edge, to open it like a book.
2. **Flatten:** Cover the butterflied turkey with plastic wrap. Use a meat mallet to pound the turkey to a uniform thickness of about 1/2 inch.
3. **Season:** Remove plastic wrap and season generously with salt and pepper.
### Phase 3: Assembly (The Roll)
1. **Layer the Chicken:** Spread the **Chicken Velvet** paste evenly over the flattened turkey, leaving a 1-inch border around the edges.
2. **Add Fillings:**
* Spread the **Spinach Cream Cheese Filling** over the chicken paste.
* Arrange the **julienned bell peppers** and chopped **pistachios** in a tight row down the center of the turkey (this will be the middle of the spiral).
* Sprinkle the **shredded cheese** over the top.
3. **Roll:** Starting from the long edge, roll the turkey up tightly, jelly-roll style.
4. **Tie:** Secure the roulade tightly with **butcher's twine** at 1-inch intervals to hold its shape.
### Phase 4: Cooking
1. **Preheat:** Oven to **350°F (175°C)**.
2. **Sear (Optional for color):** Heat 1 tbsp of oil in a large skillet over high heat. Sear the turkey roulade on all sides until golden brown.
3. **Roast:** Place the roulade on a roasting rack in a pan. Roast for **60–75 minutes**, or until the internal temperature reaches **165°F (74°C)**.
4. **Rest:** Allow the roulade to rest for **15–20 minutes** before removing the twine and slicing.
