4 bell peppers (red, green, or yellow), halved & seeds removed
1 lb ground beef
1/2 cup cooked rice
1/2 onion, diced
1 cup canned corn, drained
1/2 cup diced tomatoes (optional)
1 cup shredded mozzarella or cheddar cheese
1 tbsp tomato paste
1 tsp garlic powder
1 tsp onion powder
1/2 tsp Italian seasoning
Salt & black pepper to taste
1 tbsp olive oil
Preheat oven to 375°F (190°C). Cut peppers in half lengthwise, remove seeds, and drizzle with olive oil. Bake for 10 minutes for that tender-yet-firm texture and perfect stuffing base!
