Instructions
1. Prepare the Crumble Topping:
In a bowl, combine the graham cracker crumbs, brown sugar, and cinnamon. Stir in the melted butter until the mixture resembles wet sand. Spread it on a baking sheet and bake at 350°F (175°C) for about 10 minutes, or until golden. Let it cool.
2. Make the Cheesecake Layer:
In a mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until well combined. Gently fold in the whipped topping until smooth and creamy.
3. Prepare the Peach Layer:
If using fresh peaches, peel and dice them, then toss with sugar if desired. For canned peaches, simply drain and dice them.
4. Assemble the Parfaits:
In clear cups or jars, layer the ingredients: start with a layer of crumble topping, followed by a layer of the cheesecake mixture, and then a layer of peaches. Repeat the layers until the cups are filled, finishing with cheesecake on top and sprinkling extra crumble and peach slices for garnish.
5. Chill:
Refrigerate the parfaits for at least an hour before serving to allow the flavors to meld.
