Ingredients :

2 cups heavy cream

1 cup whole milk

3/4 cup granulated sugar

1 tablespoon vanilla extract

2 cups fresh or frozen cherries, pitted and chopped

2 tablespoons lemon juice

2 tablespoons water

Instructions :

For the Cherry Mixture:

Cook the Cherries: In a small saucepan, combine the cherries, lemon juice, and water. Cook over medium heat for 5-7 minutes, stirring occasionally, until the cherries soften and release their juices. Remove from heat and let the mixture cool to room temperature.

For the Ice Cream Base:

Mix the Ingredients: In a large mixing bowl, whisk together the heavy cream, whole milk, sugar, and vanilla extract until the sugar is dissolved.

Combine: Once the cherry mixture has cooled, gently fold it into the ice cream base, ensuring the cherry chunks and juice are evenly distributed.

Churn the Ice Cream:

Churn: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually about 20-25 minutes) until the ice cream reaches a soft-serve consistency.

Freeze: Transfer the churned ice cream to an airtight container and freeze for at least 4 hours, or until firm.

Serve and Enjoy:

Serve: Scoop the Cherry Vanilla Ice Cream into bowls or cones and enjoy! Garnish with extra cherries or a drizzle of cherry syrup if desired.
