Make a Feta and Chickpea Salad at the weekend for weekday lunches or serve up for a light and healthy meal or side salad at any time.
Ingredients
400 g can chickpeas
200 g feta cheese
½ small cucumber
1 trimmed celery heart
1 red or yellow pepper
12 olives, green or black
120 ml olive oil
20 ml white wine vinegar

Instructions
For the salad:
Drain, rinse, and dry the chickpeas
400 g can chickpeas
Cut the feta into small cubes - about the size of the chickpeas
200 g feta cheese
Wash and chop the salad vegetables into similar sized pieces
½ small cucumber,1 trimmed celery heart,1 red or yellow pepper
Slice the olives into slivers
12 olives,
Mix all the ingredients in a salad bowl
For the dressing:
Put the oil, vinegar and seasoning into a jar with a lid and shake until combined. Pour over the salad and mix gently to make sure that everything is covered.
