For the Chicken & Sauce:
1 lb chicken breast, sliced into strips
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 tbsp butter
2 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/4 cup grated Parmesan
Salt & black pepper to taste
Fresh parsley, chopped
For the Mashed Potatoes:
2 large potatoes, peeled and cubed
2 tbsp butter
1/4 cup warm milk or cream
Salt to taste

Make the Mashed Potatoes: Boil potatoes in salted water until fork-tender. Drain, mash with butter and warm milk, season with salt, and keep warm.
Cook the Chicken: Season chicken with salt and pepper. In a skillet over medium heat, melt butter and sear chicken until lightly golden and cooked through. Remove and set aside.
SautΓ© the Peppers: In the same pan, add bell peppers and cook until soft but still vibrant, about 3–4 minutes. Add garlic and cook 30 seconds.
Build the Sauce: Pour in chicken broth and cream. Simmer gently, then stir in Parmesan until smooth and creamy.
Finish: Return chicken to the pan, coat in sauce, and simmer 2–3 minutes. Sprinkle with fresh parsley.
