This refreshing summer sorbet, inspired by a dessert from the River Cafรฉ in London, blends the sweetness of strawberries with the vibrant tartness of lemon. The recipe calls for a whole lemon (rind included), which enhances the overall flavor balance beautifully.
Ingredients:
1 whole lemon, seeded and roughly chopped
2 cups sugar
2 pounds strawberries, hulled
Juice of 1 to 2 additional lemons (to taste)
Instructions:
Prepare Lemon and Sugar: In a food processor, combine the chopped lemon and sugar. Pulse until the mixture is well combined, then transfer to a bowl.
Purรฉe Strawberries: In the same food processor, purรฉe the hulled strawberries. Add the strawberry purรฉe to the lemon-sugar mixture along with the juice of 1 lemon. Taste and adjust the lemon juice, adding more if you prefer a more pronounced tartness.
Churn: Pour the mixture into an ice cream machine and churn until it reaches a sorbet consistency.
