SKINNY, lightened up and healthy enchilada bake!!!! Made right in the crockpot!!! So cheesy and yet guilt-free!!! INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. Nacho Cheese Beef Wrap 🌯


Ingredients:

1 lb ground beef

1 packet taco seasoning

1/4 cup water

4 large flour tortillas

1 cup nacho cheese sauce

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup sliced jalapeΓ±os

1/2 cup shredded cheddar cheese

Sour cream (optional)

Instructions:

Cook the Beef: In a skillet over medium heat, brown the ground beef until fully cooked, breaking it into small pieces as it cooks. Drain any excess fat.

Season the Beef: Add the taco seasoning packet and 1/4 cup water to the skillet. Stir to combine, and cook until the mixture thickens, about 2-3 minutes. Remove from heat.

Prepare the Tortillas: While the beef is cooking, warm the flour tortillas in a microwave for about 15-20 seconds or heat them on a skillet for a few seconds on each side until soft and pliable.

Assemble the Wraps: Spread a generous amount of nacho cheese sauce evenly over each tortilla. Divide the seasoned beef mixture among the tortillas, placing it in the center.

Add Toppings: Top each tortilla with shredded lettuce, diced tomatoes, sliced jalapeΓ±os, and shredded cheddar cheese.

Roll Them Up: Fold in the sides of each tortilla and then roll it up tightly to create a secure wrap.

Serve and Enjoy: Serve the wraps with a dollop of sour cream on the side if desired. Enjoy your delicious, cheesy, and spicy nacho beef wraps!
