Ingredients: 1 tablespoon olive oil 1 medium Spanish onion, chopped 2 cloves garlic, chopped 4 chicken thighs, skin on 1 teaspoon kosher salt Paprika 1 cup large chopped potato 1 cup large chopped carrots 1/2 cup diced red bell peppers 1.2 jar Bertolli Riserva Marinara 1/4 cup Spanish pimento stuffed green olives 1/4 cup frozen peas Instructions: Heat a large skillet to medium-high heat with olive oil. Pat the chicken thighs dry and season each piece with 1/4 teaspoon of salt and sprinkle of paprika. Brown in the pan until skin is golden brown. It will not be cooked all the way through. Ingredients ▢4 slices white sandwich bread , preferably stale ▢1 tbsp butter ▢1 egg ▢2 tbsp milk ▢16 marshmallows , halved horizontally ▢Nutella TOPPINGS (OPTIONAL) ▢Marshmallows ▢Chocolate sauce Instructions Combine egg and milk in a shallow dish large enough to lay the bread in. Spread Nutella on all 4 slices of bread. Generously! Place marshmallows on 2 of the pieces of bread, with the sticky side of the marshmallows (ie. the cut side) facing up. Ingredients ▢2 lb / 1 kg chicken wings , cut into wingettes and drumettes (see here for how to cut whole wings) ▢Oil for grilling MARINADE ▢4 cloves minced garlic ▢1/4 cup lime juice (2 to 3 limes) ▢1/4 cup fish sauce ▢2 tbsp soy sauce ▢3 tbsp brown sugar ▢2 tbsp vegetable oil ▢2 stalks lemongrass GARNISHES (OPTIONAL) ▢1 birds eye chilli , finely chopped ▢Coriander leaves Instructions Bruise the lemongrass using the side of your knife (or a pestle). Ingredients ▢1 tbsp olive oil ▢350 g / 12 oz chicken thigh fillets , cut into 8 pieces ▢180 g / 6oz chorizo , the best you can afford. I like to use a spicy one. (Note 3) ▢1 small brown onion , diced ▢1 small red capsicum / bell pepper , roughly diced ▢2 cups (packed) shredded spinach (optional - see Note 1) ▢2 garlic cloves , minced ▢1 can (400g/14oz) crushed tomato ▢1 1/2 cups chicken stock/broth ▢1/3 cup frozen peas ▢1 tsp paprika ▢1 cup spanish calasparra rice (Note 2) ▢1 1/2 tbsp parsley , finely chopped ▢Salt and pepper Instructions Cut chorizo into quarters vertically, then slice into 0.5cm / 1/3 inch pieces. Ingredients ▢1 tbsp oil (for frying) ▢6 (1.5-2lb / 750g-1kg) chicken thigh fillets , boneless skinless ▢Salt and pepper ▢1/2 cup water SAUCE ▢1/3 cup ketchup or tomato sauce ▢2 tbsp soy sauce ▢1 tbsp dijon or American mustard ▢2 tbsp hot sauce (optional) ▢2 tbsp vinegar (any) ▢2 1/2 tbsp honey ▢2 garlic cloves , crushed Instructions Whisk Sauce ingredients in a bowl. Sprinkle chicken with salt and pepper. Heat oil in a non stick pan over medium high heat. Quickly dip chicken in Sauce, shake off excess, then place in pan. Cook the first side for 2 to 3 minutes, until it caramelises and is dark golden, then turn and cook the other side for 2 minutes. Add remaining Sauce and water. Bring to rapid simmer, stirring occasionally, scraping the bottom of the pan to get all the brown bits stuck to the bottom of the pan. When the sauce has thickened (around 1 to 2 minutes), remove from heat. Turn chicken in Sauce to coat. To serve, place chicken on plate and spoon over Sauce.

Ingredients ▢1 cup uncooked basmati rice (or long grain or wild rice) ▢1 1/2 cups water (Note 2) ▢1/2 tsp salt ▢1 1/2 tins (21 oz / 600 g) chickpeas , drained, but still wet ▢1/4 tsp salt ▢1 tsp cumin ▢1 tsp garam masala (Note 1 for substitutions) ▢1 tbsp olive oil ▢1/4 cup parsley leaves ▢1/4 cup cilantro (coriander) leaves ▢1/4 cup sultanas or currents ▢Black pepper ▢1/2 cup fried shallots , store bought (Note 3) Instructions Combine rice, water and 1/2 tsp salt in a saucepan, bring to boil, turn down then simmer for 8 to 10 minutes until the water is mostly absorbed. Remove from heat and let rest for 10 minutes - it will absorb the remaining water. While rice is cooking, combine chickpeas, 1/4 tsp salt, cumin and garam masala in a bowl, toss to coat. Ingredients ▢2 kg / 4 lbs meaty pork ribs , cut into single rib pieces ▢1 tsp sesame oil ▢2 tbsp lemon juice ▢2 tbsp shao xing wine ▢4 tbsp soy sauce ▢4 tbsp brown sugar or honey ▢4 tbsp tomato sauce or ketchup ▢2 tbsp hoisin sauce ▢2 tbsp oyster sauce ▢2 tbsp sambal oelek ▢6 cloves garlic , finely chopped ▢2 tbsp grated ginger ▢1 tsp Chinese five spice powder ▢1 tsp salt ▢Sesame seeds , coriander, shallots and red chilli to garnish (optional) Instructions Mix marinade ingredients together in a bowl or freezer bag. Add the ribs and marinate for at least an hour, or overnight if possible. You can freeze the marinaded meat if you wish. Before cooking, let the ribs come to room temperature. Preheat the oven to 160C/320F. Pour the ribs and all the marinade into a baking dish large enough so the ribs are in a single layer, but not so large that they are too spread out. Tomato and Artichoke Salad with Capers

Ingredients ▢3 to 4 tomatos , sliced into 1/3"/0.5cm slices ▢1 tbsp baby capers , or ordinary capers roughly chopped ▢Few tinned artichokes , roughly chopped ▢1/4 red spanish onion , finely sliced ▢1 1/2 tsp salt flakes ▢Fresh pepper ▢2 tbsp olive oil ▢1/2 lemon , juice only ▢2 tbsp fresh oregano leaves (or other herb of your choice) Instructions Lay tomatoes on a plate, slightly overlapping. Scatter with capers, artichokes and red onion. Scatter with salt and pepper. Scatter with oregano leaves. Drizzle with olive oil and juice of the 1/2 lemon. Leave for 5 minutes so the salt makes the juices of the tomato seep. Do not leave for too much longer otherwise the salt will draw too much of the tomato juices out!

Crispy Couscous Pancake with Tomato & Onion

Ingredients ▢4 tbsp olive oil ▢1 cup couscous ▢1 tsp vegetable stock powder (or chicken stock powder, or just salt) ▢3/4 cup boiling water ▢1 brown onion, diced ▢2 medium tomatoes, diced (about 1 1/4 cups) (see notes) ▢1 tbsp tomato paste ▢1 tsp sugar ▢Handful coriander or parsley leaves (optional) ▢1/2 tsp salt ▢Fresh black pepper Instructions Combine couscous, stock powder (or salt) and water. Cover with cling wrap and put aside for 10 minutes, then fluff with a fork. Heat 2 tbsp olive oil in a pan about 20cm wide over medium heat. Add the onion and sauté until translucent and soft, but not browned - about 3 to 5 minutes. Add tomato paste and sugar and stir for 1 minute. Add the diced tomatoes, salt and black pepper and cook for 3 minutes. Combine the tomato mixture and couscous, and mix well. Ingredients ▢4 chicken breasts , 150 – 180g / 5 – 6 oz each (Note 1) ▢2 tsp olive oil SEASONING: ▢1 1/2 tbsp brown sugar ▢1 tsp paprika ▢1 tsp dried oregano or thyme , or other herb of choice ▢1/4 tsp garlic powder ▢1/2 tsp each salt and pepper GARNISH, OPTIONAL: ▢Finely chopped parsley Instructions Preheat oven to 425°F/220°C (200°C fan). Pound chicken to 1.5cm / 0.6″ at the thickest part – using a rolling pin, meat mallet or even your fist (key tip for even cooking + tender chicken). Mix Seasoning. Line tray with foil and baking / parchment paper. Place chicken upside down on tray. Drizzle chicken with about 1 tsp oil. Rub over with fingers. Sprinkle with Seasoning. Flip chicken. Ingredients 2 large potatoes 500g Parsley Spring onions Salt, pepper, garlic powder 2 medium eggs Corn starch 2 large tablespoons (40g) Sweet paprika Coriander 7g Vegetable oil for frying For the sauce: Natural yogurt 120g 1 lemon (half lemon juice) Lemon zest Parsley Half a cucumber Salt and pepper 1 clove of garlic Spicy sauce Olive oil Directions: 1. Grate the potatoes and squeeze them well. 2. Place them in a bowl and add the parsley, chives, salt, pepper, garlic, eggs, starch, paprika and coriander. 3. Form the pancakes and fry them in a pan with oil. 4. Sauce: Mix yogurt, lemon, parsley, cucumber, salt, pepper, garlic, hot sauce and oil. 5. Serve the pancakes with this delicious sauce.

Best Ever Beef Stew

Ingredients 1/2 cup oil 1 kg boneless beef 2 tbs ginger garlic paste 2 large tomato paste 1 tbs red chilli powder 1/2 tbs turmeric salt as per taste 1/2 cup fried onions 3-4 cups water 1 boiled potatoes 1/2 tbs black pepper capsicum Directions Step 1 In a saucepan add 1/2 cup oil and boneless then fry for 5 minutes Step 2 Add 2 tbs ginger garlic paste and again fry for 5 minutes Step 3 Add  2 large tomato paste then mix it after that add 1 tbs red chilli  powder, 1/2 tbs turmeric and salt as per taste then mix it very well Step 4 Add 1/2 cup fried onions then fry until it is roasted Step 5 then add 3-4 cups of water and cook until it thickens Step 6 then  in a pan add 1 boiled potato but chopped them in big pieces sprinkle  1/2 tbs black pepper then add capsicum and fry for 5 minutes Step 7 add veggies in the beef stew and cook for 2-3 minutes Step 8

BOILED EGG FRITTERS

Ingredients: 1kg of potatoes Salt Pepper Parsley 4 hard-boiled eggs 3 eggs Bread crumbs oil for frying Preparation: 1. First add the potatoes to the water and boil for 30 minutes or until soft. 2. Transfer the potatoes to the bowl and mash them. Season with salt and pepper and add the chopped parsley. Mix everything well. 3. Cut the hard-boiled eggs into quarters to prepare them. 4. Shape the mixture into balls and flatten them with one hand. Add a piece of egg and close the fritters. 5. Coat each with the beaten egg mixture, then coat with the breadcrumbs. 6. Fry in hot oil until golden on both sides. Enjoy!!

Step 1 Prepare the meatballs 1kg Ground beef mix ¼ cup breadcrumbs ½ cup grated cheddar cheese 1 tblspn Knorrox All-in-one seasoning 1 tsp olive oil Combine all the ingredients in a large bowl.. Roll into balls and Bake for 20 minutes or until cooked through Step2. Cook 2 cups of penne pasta according to package directions, then drain and set aside Step 3 Ingredients ¼ cup mushrooms ½ onion chopped 1tsp crushed garlic ¼ cup green pepper 1 grated tomato 250ml fresh cream 1 tblspn Knorrox All-in-one seasoning Method Fry onions, green pepper, garlic, cook until softened, add grated tomato (I added cocktail tomatoes) mushrooms and cook for 2 minutes Add fresh cream let it simmer for 5 minutes on a medium heat, now gently stir in the penne pasta and meat balls. Mix everything together with spatula. Add seasoning according to your personal preference. You can add cheese. Garnish with parsley
