SKINNY, lightened up and healthy enchilada bake!!!! Made right in the crockpot!!! So cheesy and yet guilt-free!!! INGREDIENTS 2 boneless skinless chicken breasts 1 1/4 cups chicken broth 1 cup uncooked quinoa, rinsed 1 10-ounce can enchilada sauce 1 4.5-ounce can chopped green chilies 1/2 cup corn kernels, frozen, canned or roasted 1/2 cup canned black beans, drained and rinsed 2 tablespoons chopped fresh cilantro leaves 1/2 teaspoon cumin 1/2 teaspoon chili powder Kosher salt and freshly ground black pepper, to taste 3/4 cup shredded cheddar cheese 3/4 cup shredded mozzarella cheese 1 avocado, halved, seeded, peeled and diced 1 Roma tomato, diced INSTRUCTIONS Place chicken into a 6-qt slow cooker. Stir in chicken broth, quinoa, enchilada sauce, green chiles, corn, black beans, cilantro, cumin and chili powder; season with salt and pepper, to taste. Corned Beef and Cabbage is the perfect recipe to serve on St. Patrick’s Day and it’s fool proof in the slow cooker!


ingredients

1 medium onion, cut into wedges

3 medium carrots, cut in half length wise and then cut into 3-4 inch pieces

2 medium parsnips, cut in half length wise and then cut into 3-4 inch pieces

1 medium turnip, peeled and cut into large chunks

5 small red potatoes

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 (3 lb) corned beef brisket (either pre-seasoned or with a pickling spice packet)

2 bottles lager beer

3-4 cups chicken stock

1 small head cabbage, cut into wedges


instructions

Layer all of the vegetables except the cabbage in the bottom of your slow cooker and season them with the dried thyme and dried rosemary.

Next, add the corned beef, fat side up, on top of the vegetables. If your corned beef came with a seasoning packet, sprinkle that on top. Add the beer and enough chicken stock to almost cover the meat.

Cook on high for 4 1/2 hours or low for 8 1/2 hours. Then, add your cabbage and cook an additional 45 minutes on high or 1 1/2 hours on low. Serve with the cooking liquid. Enjoy!
